# What You'll Need:

→ Sausage

01 - 4 Italian sausages (mild or hot, approximately 14 oz total)

→ Vegetables

02 - 2 large bell peppers (any color), sliced into strips
03 - 1 large red onion, sliced into wedges

→ Seasonings

04 - 2 tablespoons olive oil
05 - 1 teaspoon dried oregano
06 - 1 teaspoon dried basil
07 - ½ teaspoon garlic powder
08 - ½ teaspoon crushed red pepper flakes (optional)
09 - ½ teaspoon kosher salt
10 - ¼ teaspoon black pepper

→ Garnish (optional)

11 - Fresh chopped parsley
12 - Fresh basil leaves

# How To Make It:

01 - Preheat the oven to 425°F. Line a large baking sheet with parchment paper or foil to facilitate easy cleanup.
02 - In a large mixing bowl, combine the sliced bell peppers and red onion with olive oil, dried oregano, dried basil, garlic powder, crushed red pepper flakes if using, kosher salt, and black pepper. Toss until the vegetables are evenly coated.
03 - Spread the seasoned vegetables evenly across the prepared baking sheet. Nestle the Italian sausages among the vegetables.
04 - Place the baking sheet in the preheated oven and roast for 25 to 30 minutes. Halfway through cooking, flip the sausages and stir the vegetables. Continue roasting until the sausages are browned and reach an internal temperature of 160°F, and the vegetables are tender and caramelized.
05 - Remove the pan from the oven and let rest for 2 to 3 minutes. Optionally slice the sausages. Garnish with fresh parsley or basil before serving. Serve hot, optionally accompanied by crusty bread or over rice.
